Roasted Beet & Chickpea Salad (Vegan)
Sometimes I just want a nice and clean meal that won't leave me feeling bloated or heavy. I've been eating more vegan dishes lately since discovering Angela Liddon's "The Oh She Glows Cookbook" on Amazon. I happened to have most of the ingredients for her roasted beet salad and chickpea salad recipes so I gave them a go! I substituted here and there or just omitted if I didn't have the specific ingredient and the overall result was great! So the chickpea salad was supposed to be a chickpea salad sandwich, but there was only one slice of bread left so the hubs and and I shared.
Have you ever seen yellow figs like these? I've seen green and black, but never this variety! Our local Trader joes carried these tiger figs and I hope they will be available again next year.
The red berries are goji berries provided from my mom's garden! She gave me a huge bag full and instructed me to eat 12 a day for optimal health benefits. I never got around to it and ended up drying the rest before they spoiled. Hopefully they are still effective! Cheers to a healthy lifestyle!
