Sweet Potato Chips
Cheeeeeeppppppssssss!!! I love chips. The hubs loves chips more than I do. In attempts to be a little healthier about it I wanted to try homemade chip alternatives. Veggie straws were not satisfactory and seeing the options in store just made me want to try making them at home. I’ve made kale chips that tasted good, but they were too light and airy to feel like we were eating anything of substance. I found this simple recipe for sweet potato chips and they turned out pretty well. If you have a mandolin then I would definitely use that to make your life easier. Cutting a whole sweet potato into thin, even slices is definitely doable, but just takes more time. These can never compare to Hot Cheetos or Cooler Ranch Doritos, but your body will thank you later. :)
*Chop your potato of choice!
*Pour in some oil and sprinkle salt + pepper to taste. Add red pepper (optional) or other herbs to change up the flavor! I think I'll be using some garlic and maybe oregano or basil next time.
*Toss Toss Toss...
*Lay them out on a baking sheet lined with parchment paper. And as directed, bake at 450 for 10 minutes or until crisp/lightly browned. My oven is a bit more powerful so I found that I could have either reduced cooking time or reduced the heat.
Your healthy snack/chip alternative is now complete! I hope I'll be eating these more often then those Doritos....
