Healthy Car Snacks
Good Morning! I'm getting ready to go on a mini road trip down south so I thought it'd be nice to share some of the snacks I prepared for the drive. I wanted healthy options instead of chips and fast food so I decided to make some vegan energy balls to pair with some store-bought hummus. The energy balls don't look like they'd taste good, but they are actually quite delicious. When I'm having a munchie craving just one of these will satisfy me. Eat 2 or 3 and you won't be hungry anymore!
- 1 C almonds
- 2/3 C dates
- 1/3 C dried fruit of your choice
- 1/4 C pecans
- 1 Tbsp chocolate chips (optional)
- 1 Scoop protein powder (optional)
- Salt to taste
Combine everything in a food processor and pulse until it forms a dough like consistency. Add a tiny bit of water as needed if your mixture is on the dry side! Form into balls and enjoy!
In this version I had some plant based coconut protein powder on hand so I threw in a scoop to give it a kick!
